| 2 cups | Pastry soft-wheat flour (Maida) |
| 1 cup | All purpose soft-wheat flour (Atta) |
| 1/2 tsp | Baking Powder |
| 1 pinch | Salt |
| 1/3 cup | Clarified Butter (Ghee) |
| 1/2 cup | Yogurt |
| 1/4 cup | Warm Water |
Preparation
- Sift the first four dry items
- Cut the butter in the flour well.
- Knead in yogurt.
- Continue kneading with warm water.
- Let stand about six to eight hours at room temperature.
- Make a ball about 2" diameter and roll it out about 7" diameter.
- Heat a griddle to medium heat. Cook on the griddle about two minutes. Turn over, it should be lightly brown.
- Cook another minute or so. Kulcha is ready. Optionally, butter it on one or both sides. Serve hot.
