Ingredients

Amount Ingredients
2 cupsPastry soft-wheat flour (Maida)
1 cupAll purpose soft-wheat flour (Atta)
1/2 tspBaking Powder
1 pinchSalt
1/3 cupClarified Butter (Ghee)
1/2 cupYogurt
1/4 cupWarm Water

Preparation

  • Sift the first four dry items
  • Cut the butter in the flour well.
  • Knead in yogurt.
  • Continue kneading with warm water.
  • Let stand about six to eight hours at room temperature.
  • Make a ball about 2" diameter and roll it out about 7" diameter.
  • Heat a griddle to medium heat. Cook on the griddle about two minutes. Turn over, it should be lightly brown.
  • Cook another minute or so. Kulcha is ready. Optionally, butter it on one or both sides. Serve hot.
